Plant Based For Lent
For our Green Team challenge this year, we have chosen Plant Based for Lent. You can choose to participate as much or as little as you can. The more you lean into the challenge, the more the positive impact you will have on the environment, your own health, animals, world hunger and so much more.
So, what does this challenge entail? Well, from Wednesday, February 22 until Sunday, April 9, we encourage you to remove animal foods from as many of your meals as you can. This may sound daunting, but fear not, we will be here to help you all along the way. We will host a Zoom meeting with tips, tricks and suggestions, as well as answering any questions you have. After that, we will offer weekly support meetings via Zoom (see below for more information). To get you started, below are some suggestions. First suggestion, don’t try to reinvent the wheel. We all have several meals that we eat repeatedly. Start there. If you typically eat spaghetti with meat sauce, try spaghetti with a meat-free pasta sauce. If you’d like the texture to be the same, you could add plant meat crumbles (Impossible, Beyond, or Gardein are brands available in the freezer section). If you prefer to keep it on the healthier side, crumble a brick of firm tofu into the sauce or add sautéed some onions, peppers, and mushrooms.
- Breakfast suggestions include cold cereal with a plant-based milk, oatmeal with bananas & berries, avocado toast, pumpkin pancakes, chia pudding chia pudding , or tofu scramble (we’ll talk about this at the Zoom meeting).
- Lunch/Dinner suggestions: lasagna, curry lentil soup, a huge salad, potato leek soup ), or a veggie stir fry served over rice with peanut sauce.
- Dessert: fruit, Medjool dates filled with peanut butter, or vegan brownies )
